Tasting notes
Eye: Pale yellow bright colour with some green lights.
Nose: The nose is an intense association of citrus (grapefruit and orange zest) and tropical fruits with a light floral note.
Palate: The sensation on the palate is very pleasing with a good balance between liveliness of this wine compared with its volume and roundness of the flavours associated with Sauvignon (we find again the notes of grapefruit and candied lemon-peel on the finish).

The 2011 vintage
The 2011 vintage was characterized by an original climatology. The vegetal cycle began without any hydric restraints. As of April, summery temperatures arrived resulting in a three-week lead in comparison with 2010. During the month of June, the rains came, temperatures returned to normal but then did not rise in July, which was one of the coolest months in the last 10 years. Humidity and low seasonal temperatures slowed down the cycle’s earliness. An exceptional September and October, with historically high temperatures accompanied by the Tramontane allowed the harvesting to take place in the best possible conditions.
Winemaking
Harvest: Machine (between 4 and 9 am) after tasting the grapes.
Winemaking: Maceration with the skins (8-12 hours). Pressing. Racking. Cold stabulation (8/10°C) for a few days - Reincorporation of filtered fine lees. Addition of yeast. Fermentation between 16-18°C.
Ageing: On fine lees for a few weeks. Assembling and filtering.
