Harvest

Hand harvest, Gentle pressing using a pneumatic press Temperature controlled stainless steel vats with cool settling at 7. The viticultural year 1996 is characterized by a significant water deficit resulting from a winter and a very dry spring. Then, we have a quick succession of different contrasted periods (Sun and rain). Flowering begins 16th of June and harvest 14th September.

Tasting Notes

Firm and smoky, with a hint of oyster shell underscoring the flavors of roasted walnut, dried currant, fleur de sel, ground ginger and crystallized honey. Racy on the palate, delivering a zesty finish.

Terrior

Vineyard of 40 years old called in village of Buxeuil on Clay-limestone soils of the Kimmeridgian bank in Cote des Bar.

Vinification

Traditional Champenois press.Temperature controlled stainless steel vats with cool settling at 7C. Malolactic fermentation is blocked to retain the freshness of the fruit.
