Harvest
Our vines are cared for using traditional techniques; harvesting is manual and follows removal of unripe fruit and leaves. The harvest is meticulously sorted.

Ageing
Traditional and is carried out in new fine-grained oak barrels. The wood marries with the wine, enhancing its balance and slowly preparing its future in the darkness of our underground cellar in an old stone quarry.
Winemaking
The wine is made in small wooden and stainless steel tanks reserved especially for each variety. The harvest is fully de-stemmed. Vatting takes up to 3 weeks. The Merlot's malolactic fermentation takes place in new barrels in our underground cellar to enhance the expression of the fruit’s quality.
