Tasting notes
This wine has an expressive nose of fresh red fruit nicely complemented by sweet spices, such as cloves, cinnamon, and nutmeg from the oak. Light touches of balsamic enhance the complexity. Fine tannins lend a velvety, firm mouthfeel.
Vinification
The grapes were hand-picked and transported to the winery in 14kg boxes. They must underwent a 24-hour pre-fermentation cold soak at 9 degrees Celcius. Alcoholic fermentation followed at 24-28 degrees Celcius with three pumpovers daily. The wine remained on its skins for 18-38 days, depending on the development of each lot. The final blend was aged for 12 months in 90% French and 10% American oak barrels, 20% of which were new.
Vineyard
The grapes are sourced from the Max II vineyard, which has alluvial clay-loam soils with a 70% stone content. These features offer the vines good drainage, which works well with drip irrigation. The vineyards are vertically trained, allowing for sun exposure throughout the growing season.
Estate
Don Maximiano Errazuriz founded Viña Errazuriz in 1870 in the Aconcagua Valley, 65 miles north of the capital, Santiago. Recognizing that this valley, with its hot, dry summers and moist Pacific Ocean breezes, was ideal for growing grapes, Don Maximiano sent for the finest clones from France and with tenacity and perseverance transformed this barren land into a world-class vineyard. Today, the tradition of quality lives on with Don Maximiano’s descendant, Eduardo Chadwick.
Wine
The Cabernet Sauvignon Single Vineyard is made from grapes hand-picked in Errazuriz' prestigious Don Maximiano Estate, located in the Aconcagua Valley, a semi-desert region where the hot summer days are cooled by afternoon breezes. The high day-night temperature differences of the Don Maximiano Estate slows ripening and helps create intensity of flavors and concentration. It is difficult to find a better quality Cabernet from anywhere in the world at this price point.
